Moroccan Chicken
Ingredients:
2 1/2 lbs chicken breasts, cubed
3/4 cup onion, chopped
2 tsp paprika
1 tsp ground cumin (or camino)
1 tsp ground ginger
1 tsp turmeric
1/2 tsp cinnamon
1/4 tsp ground black pepper
1/4 tsp cayenne pepper
2 tbsp chopped garlic
5 slices of fresh lemon, seeds removed
1 cup green olives
1 16 oz can of artichoke hearts in water, quartered water drained
1/2 cup chicken stock
Salt to taste
Chopped Italian parsley
Slow cooker
Directions:
Place chicken, onion and all spices in the slow cooker and stir, making sure chicken is coated with spices. Add the remaining ingredients except the parsley and stir well. Set the slow cooker to cook for 3-4 hrs. Your cook time will vary depending on your slow cooker; make sure the meat is cooked through but not too dry. Serve the finished chicken over cooked quinoa and garnish with freshly chopped parsley.
Serves 6-8
Tip: This dish goes well with sauteed or steamed kale.
