Video Recipe – Healthy Jambalaya

Healthy Jambalaya
Ingredients:
1 pound shrimp, shelled and deveined
2 large chicken breast, cubed
2-3 links of spicy chicken sausage, cut into pieces
1 medium green bell pepper, diced
1 medium onion, diced
2 stalks of celery, diced
3 medium roma tomatoes, diced
4 tbs garlic, chopped
4 bay leaves
2 tsp hot sauce
2 tsp Worcestershire sauce
2 tbsp Creole seasoning
1 1/2 c quinoa
5 c chicken stock
Slow Cooker and Food Processor (optional)
Directions:
Place bell pepper, onion and celery in food processor and pulse til finely diced. Place all ingredients, except shrimp, in slow cooker and stir well. Cover and slow cook for. 3.5 – 4 hours. Half an hour before it is finished add the shrimp and stir again. It is done when the chicken and sausage are cooked through and the quinoa has absorbed most of the liquid. Remove the bay leaves and serve with steamed broccoli.
Serves 8-10 (half the recipe for smaller serving)
